We didn’t get Turkey for Christmas dinner. There were just the four of us and we could have a non traditional dinner. But my Mum and Dad came Boxing Day and there are something’s other people expect. I decided to test out my Turkey fryer which is a 20 litre pot on a burner that I keep in the barn. The advantage of this was that the 10lb turkey would only take 30 mins. to cook (3 minutes per lb) After a bit of research I also decided to inject it with a marinade.
Ingredients
200 g of butter
2 tbsp of salt
2 tsp garlic powder
2 tsp white pepper (do not use black pepper as this will clog the needle)
2 tsp cayenne
1/2 tsp onion powder
Juice of 1 lemon or lime
Extra chilli powder optional (I used 1 tsp smoked habanero powder)
Gentle melt the butter in a pan. When it’s melted add the spices and mix well; when the salt has dissolved allow to cool. This mixture tastes really strong; I worried about it and decided to only inject half of the turkey. (Which was a mistake as this was the meat that was eaten first) The marinating needle clogged a bit so I re heated it and passed the mixture through a sieve. I injected the breast and thigh every inch. Before I dropped it in the fryer I wiped the excess marinade off the skin with a paper towel.
The fryer was heated to between 325 - 350 F. I put the turkey in the basket and lowered it in to the hot oil. 30 Minutes later I careful removed the turkey and that was it. The skin and turkey wasn’t greasy as you may expect but moist and tender. The turkey was a double breasted one and the only criticism was that it was a bit pink close to the bone on the fattest part of the breast. Another 5-10 mins would have been fine. US sites say the biggest error people make is over cooking it.
